WHERE IS HALF OF THE CAKE?
We will talk about a situation we frequently experience when making cakes at home: the sticking problem.
There are many methods developed for this problem, which causes losses in industrial production. One of them is oiling the molds that we also make while baking cakes at home. This solution is the oldest known method. However, cake is not the only product, and besides that, problems such as matte appearance or crumbling need to be minimized as well. A process aid is still popular for solving these problems: carnauba wax. This component is obtained from palm trees growing in the northeast of Brazil and is used as a glazing, anti-sticking, and surface protector agent, especially in confectionery.
Carnauba wax is a kind of protective liquid secreted by the dry and hot air of palm tree leaves. When it dries, it falls in the form of plates, which are collected and processed. Application areas are expanded from cosmetics to dental health, from car paint to food.
Although it is also common in the food industry (as a powder), it can be mixed with oil and sprayed into molds to produce products that do not leave any residue, have the desired intact shape, and have a shiny outer surface. Moreover, the use of liquid form eliminates the problem of dusting and provides an easier working environment.
