ORGANIC CHOCOLATE? POSSIBLE WITH ORGANIC LECITHIN!

Only in certain markets were we able to see organic food sections, and there were eggs, fruits, vegetables, and milk. Today, however, the product portfolio has expanded from yogurt to biscuits and sausage to chocolate. Let's take a look at the production conditions and standards of organic foods, which are still popular despite the price difference.

Organic foods are, by definition, plant- and animal-derived foods in which modern genetic engineering techniques, synthetic pesticides, growth hormones, antibiotics, chemical fertilizers, synthetic ingredients, and chemical substances are not used.

Organic product producers are certified by the independent institutions authorized by the ministry. They are audited in accordance with the legislation, and a certificate is given. Organic products carry a special logo on the product package, and it is forbidden to promote or sell them under the name "organic if the product does not have this certificate.

In industrial 'organic' foods, all raw materials used in the product must be natural too. In other words, for an organic chocolate, its aroma, colorant, cocoa, and emulsifier should also be organic. Because of its definition, no chemical substances can be present during the production of these additives.

The question is: is it possible to produce organic additives for industrial products? The pleasing answer is that it is possible today. Let's talk about the organic lecithin in our portfolio. For the production of lecithin, sources such as sunflower or soy are obtained through organic farming. During production, chemicals, such as agricultural or pesticides, or even substances that can't be found in nature, are not used. After harvesting, mechanical methods are used for the extraction of oil, and no solvent is used.

The organic additives are inspected according to European and American standards, and, if appropriate, the following logos are used to prove that they are certified.

But one of the most important aspects of organic production is the traceability of the raw material source. Why is traceability important? Let's explain the reason through GMO analysis: GMO analysis is usually done by a method called PCR. This method analyzes the protein in the product. Because the genetic modification affects the protein and the product with GMO can be detected on the protein. However, when lecithin production is carried out by cold filtration, the protein can be completely separated. In other words, thanks to the production method of lecithin obtained from GMO sources, the result of GMO analysis may be negative. Therefore, firms should not be satisfied with the report that only the GMO analysis is negative. It must also provide a certificate indicating that the raw material source is organic. This certificate is given to the producers who are audited according to European regulation and carries the logo.
